Must. Eat. Pumpkin.

Making a double batch for breakfast tomorrow and then a double batch to freeze as muffin "pucks." Yum!


Pumpkin Muffins

1 1/4 quick or old fashioned oats
1 c whole wheat flour
1 tsp baking powder
1 1/2 tsp pumpkin spice
1/2 tsp baking soda
1/4 cup rice milk
egg replacer (equiv. of 1 egg)
1 c canned pumpkin
3/4 c firmly packed brown sugar
1/2 tsp salt
1 tsp vanilla
Topping
1 tbsp brown sugar
1 1/2 tsp cinnamon

Combine dry ingredients in bowl. Combine wet ingredients in another bowl ( put brown sugar in this bowl) Combine wet and dry. Stir until just mixed. (Do not overmix or muffins will be tough!!)
Place in sprayed muffin tins. Sprinkle topping on muffins.

Bake at 375 for about 25 - 30 minutes.

Ohio

We snuck off to Ohio again. We are headed home tomorrow, which is a good thing because we haven't touched any of the school work I brought. They have managed to get most of their co-op homework done, so at least we won't have to rush around doing that tomorrow.

Yesterday we went down to Amish country. we seem to go every time we are back in Ohio, which is fine with me because I love it down there. I sometimes get homesick for the area. Kind of strange considering I haven't lived there in almost 25 years! (I was in 3rd grade when we moved back to the Akron area.) we did go back to visit my great-grandma often, and there was always a family reunion or funeral or Amish function to go to. Maybe that's why?

(No, my family is not Amish. Because of one great-grandfathers business and the other being the Mayor of the town that is the "county seat" my grandparents know many Amish families.)

Anyway...

The baby is still tiny. Her sister calls her "Helby." My SIL was trying to get her to say Shelby yesterday and it came out "Shhhhh... Helby!"

Sydney is getting so big. Of course, her sister being so tiny makes her seem even bigger...

The boys are having a great time down here. They get to eat things I don't normall feed them (chips, ice cream, tator tots, etc.) and hang out with family. What could be better than that?

Shelby Eleanor Ava M. (Yes, her initials are S.E.A.M.) was born on Wednesday the 14th.




We went to the family picnic with our local homeschooling group and on the way home my brother called and said my SIL was in labor. Less than an hour later she was born. We left for Ohio that night.




Here is Shelby with her sister, Sydney. Every time I talk to Syd on the phone and ask her about Shelby she says "Cute!"
